Herb Pumpkin Seed Paté

Pumpkin seeds are so good for us! They are very rich in Vitamins E and Zinc. Pumpkin seeds should be eaten raw to preserve the healthy fats found in the seeds. They contain natural tryptophan, an amino acid that helps promote sleep along with so many other amazing benefits.

Here is the list of ingredients to make this tasty pumpkin seed paté:
1 1/3 cups organic pumpkin seeds soaked
2 Tbs. olive oil
2 green onions
1 clove of garlic, minced
1/4 fresh basil
1/3 fresh parsley
2 Tbs. lemon juice
1/2 – 1 tsp. sea salt (to taste)
1/2 tsp. of turmeric for color (optional)

Preparation:

Making the pumpkin seed paté is very easy. Soak the pumpkin seeds for 4-6 hours, or overnight, and drain. Mix with the other ingredients in your food processor. Serve with vegetables or in a cabbage, lettuce, or collard green wrap.
